A great use for those brown, spotty bananas, and full of good for you oatmeal, these banana oatmeal muffins are a great make ahead breakfast! Make a big batch of muffins on the weekends and enjoy them throughout the week!
add the dry ingredients to a medium bowl and mix well. Set that aside.
Add the bananas to a bowl and mash them until they are pureed.
Add the milk, melted butter, sugar, and eggs to the bowl.
Add the dry ingredients to the wet ingredients and mix.
Do not overmix the muffin batter. It's ok if there are a few lumps left in the batter.
Scoop the batter into a lined muffin tin. Bake for 20-22 minutes or until a toothpick is inserted and comes out clean.
