Mini Pumpkin Muffins with Chocolate Chips

Indulge in Autumn's sweetest delight with these Mini Pumpkin Chocolate Chip Muffins! These bite-sized treats are bursting with warm, cozy flavors of pumpkin and studded with decadent chocolate chips.

Preheat the oven to 375 degrees. Line a mini muffin pan with muffin cups. Set that aside. In a medium bowl, mix together the all purpose flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.

Add the melted butter, brown sugar, pumpkin puree, vanilla extract, and eggs to a large mixing bowl. Mix well.

Add the dry ingredients to the wet ingredients and mix until just combined.  Do not overmix the pumpkin mixture.  It's ok if there are a few lumps left in the batter.

Fold in the chocolate chips.  Scoop the batter into muffin cups in a muffin tin.

Bake for 10 minutes at 375 degrees or until  a toothpick is inserted into the center of the muffin and comes out clean. Allow the muffins to cool to room temperature on a wire rack.  Enjoy!
