Lemon Cake Mix Crinkle Cookies

Preheat the oven to 375°. In a large bowl, add the lemon cake mix, melted butter, and eggs.  Mix well.

Add the fresh lemon juice and lemon zest to the bowl.

With a small cookie scoop, scoop a cookie dough ball into the powdered sugar and roll the dough ball well in the powdered sugar.

Add the dough ball to a parchment paper or silicone lined baking sheet.  Bake for 10-12 minutes or until the cookies are slightly golden brown.  Let them cool on a wire rack until they are room temperature,

The lemon juice and lemon zest is optional, but really gives these cookies a fresh citrus taste!
