Mix the extra virgin olive oil, red wine vinegar, Dijon mustard, Greek seasoning, and salt and pepper in a large bowl. Set the dressing aside.
Add the chopped English cucumbers, cherry tomatoes, artichoke hearts, garbanzo beans, and Kalamata olives to the bowl.
