Pumpkin Oatmeal Muffins

Full of warm spices, these easy Pumpkin Oatmeal Muffins are a great make ahead breakfast! Make a big batch on Sunday and enjoy them throughout the week for a quick breakfast on a busy morning!

In a large bowl, mix together the coconut oil and brown sugar. Mix well until fully combined.

Add the eggs to the bowl. Mix again.

Add the milk and mix again.

Add the pumpkin puree and mix again.

In a small bowl, mix together the whole wheat flour, oats, baking soda, baking powder, and pumpkin pie spice. Set that aside.

Add the dry ingredients to the bowl. Fold them in until just combined.

Line a muffin pan with the paper liners.  Scoop equal amounts of batter into the muffin tins. Bake for 20-22 minutes or until a toothpick is inserted and it comes out clean.
