Simple Pasta Fagioli

Authentic Pasta Fagioli (or Pasta Fazool as some people say) is a simple, meatless dinner that takes less than 25 minutes to make!

Add the olive oil, chopped celery, and chopped onion to a large Dutch oven and cook for 2-3 minutes.

Add one can of beans and Italian seasoning to the pot.

Let the sauce simmer for 10 minutes to soften the vegetables.

While the sauce simmers, cook the pasta according to the package instructions.

Blend the sauce and then add the second can of beans.  Mix all the ingredients together and serve with fresh parsley.
