Add the chocolate chips, vanilla extract, and heavy cream to the bowl of a double boiler.
Stay close to the double boiler and stir continuously over medium heat.
When the mixture melts completely, turn off the heat and let the mixture harden in the refrigerator.
With an ice cream scoop, scoop out some of the truffle mixture and roll the mixture into balls in the palms of your hands.
Roll the balls in sprinkles, cocoa powder, or more melted chocolate. Let the truffles harden for 1 hour and serve.
