Slice the onions, green peppers, red bell peppers, garlic, and mushrooms. Set that aside.
Add the olive oil to a Dutch oven or an oven safe pan. Add the boneless skinless chicken thighs to the pan and cook for 3-4 minutes. Flip over and cook for another 3-4 minutes until golden brown. Remove the chicken.
Add one tablespoon of olive oil to the pan. Place all the sliced vegetables in the pan and cook for 2-3 minutes until slightly softened.
Open the diced tomatoes and add it to the pan. Add the wine, Italian seasoning, salt, and black pepper to the pan. Mix well.
