In a medium bowl, mix together the flour, baking powder, and salt. Set the flour mixture aside.
In the bowl of a stand mixer, or a large bowl, add the coconut oil and brown sugar.
Cream the ingredients together for 1 minute on low speed. Add the eggs and vanilla to the bowl and mix again on medium speed until well combined.
Add the dry ingredients to the bowl with the wet ingredients and mix again. Do not overmix at this point. You just want to flour to be incorporated.
With an ice scream scoop, make even dough balls and place the dough balls on the cookie sheet.
Place the baking sheet in the preheated oven, bake for 10-12 minutes or until the cookies have crisp edges and a soft center. Transfer the baked cookies onto a wire rack in a single layer and allow them to cool.!
